100g rye starter
400g white bread flour
1/2 tsp salt
1/2 tsp easy blend yeast
1 tbsp olive oil
120g grated strong cheddar
4 rashers bacon (cooked and cut into small pieces)
a good pinch of chilli powder and ground cumin
Mix the flour, starter, yeast, salt, oil and water together.
Knead for 10mins until soft and silky.
Leave to about double in size.
Mix the cheese, bacon and spices together.
When the dough is ready, flatten out and fold in about a handful if the bacon and cheese. Repeat until its all used.
Shape and prove until the dough springs back slowly when pressed with a finger.
Bake at 190 for about 30 mins.
